Gaufrette recipe
This recipe came from my great-grandmother. Click here for the story and pictures of the final product.
Ingredients:
7 1/4 cup all-purpose flour
4 1/2 cup sugar
1 pound butter
12 large egg(s)
2 tsp. vanilla extract
1 Tbsp shortening
Instructions:
Separate eggs. Put egg yolks in sugar with melted butter and Crisco. Add vanilla and mix well. Add flour a little at a time until mixed well. Beat egg whites stiff. Add to other mixture slowly until well mixed. Place in refrigerator over night. Bake in gaufrette irons (or heart-shaped waffle maker).

Thanks for the recipe. I have tried, have the proper Gaufrettes iron, electric, but still can’t find a recipe that equals my grandmothers. Hers tasted like it was just dripping with butter and honey. They were amazing, and I am trying your recipe. It seems a bit different, so perhaps it will come closer to what I remember. Thanks a lot, Carole

Hi Carole! I’ve never had any other Gaufrettes so I can’t compare these to anything, although I think they taste very similar to Madelines. I’ll be curious to hear how these compare! I hope you like them!

How much vanilla do you put……the recipe didn’t say……I can’t wait to try these…….a friend of mine makes them for me but only about once every two years and she won’t share the recipe…….thanks for sharing

Hi Sheryl! Good eye — I’d forgotten to add the measurement for the vanilla. Anyway, it’s 2 tsp. I’ve updated the recipe to show the correction.
